Butternut Squash and Kale Casserole

One bag Penne pasta

1 small bunch kale, ribs removed and chopped

1 small butternut squash, peeled and chopped (1.5 cups)

1 lb chorizo sausage or 3 hot Italian sausages, casings removed

1 medium onion, chopped

1 T olive oil

1/4 t. crushed red pepper (depending on how spicy your sausage is)

1 c. milk

2 T. butter

1.5 c. grated Asiago cheese

Preheat oven to 350 degrees.  Set a large pot filled with water over high heat and cook pasta until al dente.  Drain and set aside.

 

In another large, deep pot, heat olive oil over moderately high heat and add onions and sausages.  Cook for a couple minutes braking apart sausages and allowing to brown.  Add butternut squash and 1/2 c. water.  Continue cooking until squash is nearing tenderness.  Add chopped kale, salt, pepper and red pepper and continue cooking several minutes more until kale is tender.  Lower heat.

Combine pasta with kale and squash and stir in milk and butter.  Put into a large casserole dish, top with grated cheese and bake for about 20 minutes until cheese is bubbly.
