Celeriac & Apple Slaw

  • 1 celeriac, peeled and grated (~2 1/2 cups)
  • 3 cups grated apples
  • 3 Tbs. lemon juice
  • 1 Tbs. olive oil
  • handful of raisins
  • 1/4 cup minced onions or shallots
  • handful of fresh herbs (parsley or basil are nice)
  • salt and pepper to taste

Mix the apples with lemon juice to prevent browning. Add all remaining ingredients, mix well, and enjoy.
