Double Chocolate Zucchini Cookies

2 c. all purpose flour

1 T. vanilla

 1 c. whole wheat flour

2 eggs

1/2 t. salt

1/2 c. wheat germ (or oatmeal)

 1/2 c. baking cocoa

1 c. coconut

 1 t. baking soda

1 c. sunflower seeds

1 c. salad oil

2 c. shredded zucchini

2 c. brown sugar

12 oz bag of chocolate chips

 

In a small bowl, mix flours, salt, baking soda and cocoa. Beat the oil and brown sugar well (in a different larger bowl). Mix in 1/4 c. of the flour mixture and blend. Add eggs and vanilla. Add the remainder of the flour mixture, then blend in the coconut, sunflower seeds, wheat germ, shredded zucchini and chocolate chips. Drop by rounded teaspoonful on greased baking sheet. Bake at 350 degrees for 8-10 minutes. Remove immediately from sheet and cool on a rack. NOTE: This is a high energy treat that tastes awesome. The recipe MAKES A TON (at least 4 dozen)! The mix will be runny, but don't let it fool you, the cookies turn out great when done. If you have extras, freeze the cookies and eat them later in the winter right from the freezer-they don't freeze very hard.
