Kohlrabi Fritters

(makes 8 fritters)

2 kohlrabi, peeled and grated

1 egg

2 T flour

1/4 t salt

canola oil for frying

Grate kohlrabi onto paper towels. Cover with additional paper towels and press down to squeeze out excess liquid. Crack and whisk the egg in a large bowl. Mix in kohlrabi and coat with egg. Sprinkle with flour and salt and stir to combine.

Heat a generous amount of oil (3-4 T) in a large frying pan over medium-high heat until oil is hot. Place spoonfuls of batter into the pan and flatten with the back of the spoon (about 4 fritters at a time). Cook 2-3 minutes until bottoms are browned, flip, and continue to cook another 2-3 minutes until browned on both sides. Remove to a clean paper towel, and repeat with remaining batter. Serve hot.

NOTE: You could easily add chopped garlic scapes, green onions, or your favorite herb. You could also be so bold as to add another egg and incorporate chopped kale or chard to it as well.
