Orange Ginger Stir Fried Broccoli Raab
1/4 C low-sodium chicken broth
1/2 C orange juice
4 tsp soy sauce
2 Tsp cornstarch
2 medium garlic clove, minced
1/2 tsp red pepper flakes
2 Tbs finely grated ginger
1 tsp + 1Tbs Sesame Oil
1 lb broccoli raab
1/2 tsp sugar
3 C of cooked rice
1. Whisk broth, orange juice, soy sauce and cornstarch togehter in a small bowl.
2. Combine garlic, pepper flakes, grated ginger and 1 tsp sesame oil in another bowl.
3. Heat remaining sesame oil in a 12 inch nonstick skillet on medium high heat until just beginning to smoke. Add broccoli raab and sprinkle with sugar; cook, stirring frequently for about 2 minutes, until broccoli raab is browned, but still crisp.
4. Push broccoli raab to the side and add oil-garlic mixture to center, mash down and cook until fragrant about 15-25 seconds. Stir to combine mixture with broccoli. Add chicken broth mixture and cook for about 2 minutes until stalks are crisp tender and sauce has reduced. Serve immediately over rice.
