Zucchini Fritters

1 lb zucchini, trimmed

1 t. salt

8 oz feta crumbled

2 scallions minced

2 T fresh minced dill

2 large eggs lightly beaten

1 medium garlic clove minced/pressed

1/4 t. black pepper

1/4 c. flour

6 T. olive oil

1 lemon cut into wedges for serving

 

Preheat oven to 200 degrees and place rack in the middle of the oven.  Shred the zucchini and toss with salt.  Let it drain in a fine mesh strainer for 10 minutes.  Wrap the zucchini in paper towels and squeeze out the excess liquid. 

Combine the dried zucchini, feta, scallions, dill, eggs, garlic and pepper together in a medium bowl.  Sprinkle the flour over the mixture and stir until uniformly incorporated. 

Heat 3 T. oil in a skillet over medium heat until shimmering.  Drop tablespoon-sized portions of the batter into the pan then use the back of spoon to press the batter into 2-inch wide fritters.  Fry until golden brown on both sides. 

Transfer the fritters onto a paper towel-lined baking sheet and place in the oven to keep warm while you cook the rest of the fritters.

Serve with lemon and tzatziki sauce.
